What's for Dinner Wednesday: Veritable Vegetable Delight Salad and Home Run Inn Pizza

{VERITABLE VEGETABLE DELIGHT SALAD AND HOME RUN INN PIZZA}




Some nights I..you  WE just don't really have the time or the energy to make a meal.  We try and avoid "fast food" and many restaurant meals are filled with excess salt, fat and calories.  What to do?  Well, how about a large vegetable salad and a frozen pizza hot from your oven?  I know. I know.  For shame right?   A FROZEN pizza?!  I am not really a fan of frozen pizza but I recently tried Home Run Inn pizza and I really like it!  They strive to use natural, pronounceable ingredients and they make their frozen pizzas the same way they make their restaurant pizzas and par bake them.  The crust is my favorite, crisp and the edges are flaky like pastry.  So, once a month or so I slack off take a break from cooking and we have Home Run Inn pizza and salad for dinner.  We get ours at Sprouts because our regular grocer, Raley's, doesn't carry Home run Inn pizzas.



If you are looking for a great Take and Bake skip the long Costco Lines and the off-flavored Papa Murphy's Pizza and head straight for Bob's Take and Bake and pick up  their classic Vegetarian pie, even our meat eater loves it!








{Veritable Vegetable Delight Salad}


{Ingredients}

1 Bag of mixed greens
1 Bag of tri-colored cabbage slaw
1 red bell pepper, cut in thin strips
1 crown of broccoli, chopped into bit sized pieces

Dressing:  Try this amazing Jalapeno Cilantro Ranch Dressing!!

{Directions}

Um...combine all in salad bowl, eat with your favorite salad dressing.

The BEST thing about this salad is that it will stay fresh and crunchy in the fridge for a whole week!

I don't know about you but I am so tired of making a salad then saving the left overs for the next day and lettuce is wilted and has lost all it's crunch.  For some reason the combo of peppers and cabbage keep everything crunchy (be sure and store with OUT dressing).  We eat salad twice a day every day so we are always looking for salads that we can make ahead.

It is a fantastic base for a Chef's Salad (boiled eggs, ham, chicken, avocado, cheese) or an Asian Chicken Salad (shredded chicken, toasted almond slices, won tons, sesame asian dressing) too.
